Vegetarian Pilaf
Ingredients
- Boiled White Round Rice - 24.7 oz
- Turnips - 5 pieces
- Ghee - 5 tablespoons
- Cumin (Zira) - 1 teaspoon
- Serviceberries - 2 teaspoons
- Mustard Greens - 2 teaspoons
- Turmeric - ½ teaspoon
- Water - 1 qt
- Salt - 3 teaspoons
Step by Step guide
Step 1
Cut the carrots into strips.
Step 2
Melt the ghee in a pot and sauté the spices.
Step 3
When the mustard starts to crackle and gives off a pleasant aroma, add the carrots, stir, and sauté for 10-15 minutes.
Step 4
Add the rice, salt, and a little turmeric for color, mix with the carrots, and immediately add hot water (boiling water is fine). Once the water boils, cover with a lid and reduce the heat to medium.
Step 5
If you are cooking 200 g of rice, use water in a 1:2 ratio, i.e., 1 part rice to 2 parts water. If cooking a larger quantity, you can use 1.5 to 1.7 times more water.
Step 6
Cook for 15-20 minutes until all the water is absorbed.
Step 7
Before serving, gently mix. It can be served with coarsely chopped tomatoes, seasoned with salt and red pepper. The result is an incredibly light and juicy pilaf.
