- Orange Bell Peppers - 1 piece

- Olive Oil - 6 tablespoons
- Parsley - to taste
- Spanish onions - 1 piece
- Citrus Zest Mix - to taste
- Feta cheese - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 374°F. Place 4 colorful bell peppers (cut in half and seeds removed, cut side down) on a baking sheet, drizzle with olive oil (1/4 cup), and roast for 20–25 minutes until the skin starts to darken.
Step 2
Remove and cover with foil to cool faster. After about 20–30 minutes, peel off the skin (it's okay if some remains).
Step 3
Slice the peppers, add a handful of chopped parsley, 0.5 of a chopped red onion, crumble 100 g of feta cheese, add 1 teaspoon of lemon zest, and drizzle with the oil used for roasting the peppers.
Step 4
You can garnish (and it pairs well) with a thick balsamic sauce with a hint of orange.
