Ingredients
- Rice - 1 cup
- Turnips - 2 pieces
- Onion - 1 piece
- Spices - to taste
- Olive Oil - to taste
- Orange Bell Peppers - 4 pieces
- Potato - 1 piece
- Passata Tomato Sauce - to taste
Step by Step guide
Step 1
Rinse the rice and place it in boiling water, cook until partially cooked.
Step 2
In a skillet, heat olive or vegetable oil, add spices (I used cumin, turmeric, and saffron), and let them 'bloom'.
Step 3
Prepare the filling. Thinly slice the onion and sauté it in the skillet. Grate the carrots on a medium grater, add them to the onion, and sauté until the carrots are cooked. Add the diced tomato, season with pepper and salt. Add the cooked rice to the mixture and simmer with the vegetables.
Step 4
Cut off the tops of the peppers and stuff them with the filling, packing it tightly.
Step 5
Place the peppers in a pot, add the remaining filling, and slowly pour in boiling water until it completely covers them. Add salt, black pepper, a few bay leaves, and tomato paste. Let it simmer on low heat for about 30 minutes.
Step 6
Then carefully remove the peppers and drain the water. They can be served at the table.
