- Spaghetti - 10.6 oz
- 33% Cream - 7 fl oz
- Cold-smoked trout - 3.5 oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Dried Rosemary - to taste
- Fresh basil leaves - to taste
Step by Step guide
Step 1
Boil the spaghetti, or another suitable pasta, until cooked according to the time indicated on the package. There's no need to salt the water, as the fish will provide the salt.
Step 2
Meanwhile, finely chop the red fish — it doesn't have to be trout, any type will do. The amount can vary as long as the fish does not exceed the amount of pasta.
Step 3
Heat cream (preferably a richer variety) in a pan and add the fish. Keep it over the heat, stirring constantly and, importantly, not allowing it to boil. Once the fish loses its color, you can remove the pan from the heat.
Step 4
Drain the cooked pasta in a colander and add it to the sauce. Alternatively, you can add the sauce to the pasta—whichever method you prefer. Stir in the oregano and basil.
Step 5
Sprinkle the plated pasta with grated Parmesan cheese.
