Warm Beet and Potato Salad with Blue Cheese
Ingredients
- Yellow Beets - 3 lbs
- New Potatoes - 24.7 oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 6 tablespoons
- Garlic - 2 cloves
- Blue Cheese - 5.3 oz
- Mustard Greens - 4 bunches
Step by Step guide
Step 1
Boil the beets in boiling water until tender, about 30 minutes — depending on the size of the beets. Cool, peel, and cut into small segments.
Step 2
Meanwhile, in another pot of salted water, boil the potatoes until tender, about 20 minutes. Drain, cool, and cut into small pieces.
Step 3
Finely chop the beet greens.
Step 4
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the thinly sliced garlic and sauté until golden, about 2–3 minutes. Then add the greens and sauté until soft, about 3 minutes. Lightly dry.
Step 5
In a large bowl, combine the beets, potatoes, greens with garlic, crumbled blue cheese, pepper, and remaining olive oil. Serve immediately.
