- Spinach - 3.5 oz
- Chicken fillet - 7.1 oz
- White bread - 5.3 oz
- Pistachios - 3.5 oz
- Garlic - 2 cloves
- Olive Oil - 1 fl oz
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Heat a skillet with a small amount of olive oil. Cut the chicken breast into large slices and sear them over high heat for five minutes until they are golden and crispy.
Step 2
One minute before the chicken is done, add spinach to the pan, sauté it briefly, stir, and remove the skillet from the heat. Season with salt and pepper to taste.
Step 3
Remove the crust from the bread, and crumble the inside by hand or chop it using a knife or blender. Sauté the bread crumbs in a pan with two tablespoons of olive oil, pine nuts, and finely chopped garlic for five minutes. Once the crumbs are dry and the nuts are golden, remove the pan from the heat.
Step 4
Transfer the chicken with spinach to a salad bowl, sprinkle with a mixture of breadcrumbs, garlic, and nuts — and serve immediately.
