Warm chicken salad with asparagus and radicchio

Ingredients

  • Skin-On Chicken Breasts - 6.3 oz
  • Radicchio Salad - 2.5 oz
  • Asparagus - 2.8 oz
  • Sun-Dried Tomatoes - 2.5 oz
  • Garlic - 1 clove
  • Brown Sugar - 0.1 oz
  • Raspberry leaves - 0 fl oz
  • Olive Oil - 1 fl oz

Step by Step guide

Step 1

Cut the chicken into long thin strips; crush the garlic, peel it, and finely chop.

Step 2

Remove the tough ends from the asparagus and cut each stalk into 3 pieces; tear the radicchio into large pieces by hand.

Step 3

Heat 1 tablespoon of olive oil in a skillet and sauté the chicken over high heat for about 2 minutes until nearly cooked; add the asparagus and cook for 1 minute, then add the garlic, season with salt and pepper, and cook over medium heat for 1 minute.

Step 4

Prepare the dressing: combine 2 tablespoons of olive oil, raspberry vinegar, sugar, season with salt and pepper, and mix well.

Step 5

Slice the sun-dried tomatoes into thin strips.

Step 6

Arrange the radicchio on a plate, top with the chicken and asparagus.

Step 7

Add the tomatoes, drizzle the salad with the dressing, and serve.
