Warm Chickpea Salad
Ingredients
- Red Onion - 2 heads
- Zucchini - 2 pieces
- Tomatoes - 13.2 oz
- Olive Oil - 5 tablespoons
- Lemon Juice - 1 tablespoon
- Chives - 1 tablespoon
- Parsley - 0.7 oz
- Mint - 1 tablespoon
- Canned chickpeas - 28.2 oz
- Feta cheese - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 200°C (392°F). Place the onion, zucchini, bell pepper, and tomatoes in a shallow baking dish and season with black pepper. Drizzle with 2 tablespoons of olive oil and mix well. Roast for 30 minutes, stirring occasionally, until the vegetables are cooked and browned.
Step 2
Meanwhile, mix the lemon juice and the remaining olive oil. Season with salt and pepper and mix with the herbs.
Step 3
Once the vegetables are cooked, let them cool for 5 minutes, then transfer to a bowl with the chickpeas, feta cheese, and dressing. Toss before serving. Can be served with flatbread.
