Warm German Potato Salad with Spinach

Ingredients

  • Young Red Potatoes - 8.1 oz
  • Green Beans - 4.2 oz
  • Olive Oil - 3 tablespoons
  • Leeks - 3 stalks
  • Balsamic Vinegar - 2 tablespoons
  • Chopped Parsley - 2 tablespoons
  • Fresh Tarragon - 0.7 oz
  • Fresh Spinach Leaves - 4 cups

Step by Step guide

Step 1

Boil the potatoes in salted water for 8 minutes until tender.

Step 2

One minute before the cooking time is up, add the green beans.

Step 3

Meanwhile, heat the oil in a medium skillet. Add the leeks. Sauté

for 3-4 minutes until soft. Remove from heat and mix with the vinegar.

Step 5

Drain the potatoes and beans. Add the leeks, parsley, and tarragon.

Step 6

Season with salt and pepper to taste. Serve warm, garnished with spinach leaves.
