Ingredients
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- New Potatoes - 24.7 oz
- Bacon - 3 pieces
- Spanish onions - 1 head
- Champagne Vinegar - 4 tablespoons
- Dijon Mustard - 3 tablespoons
Step by Step guide
Step 1
Boil the potatoes in salted water until tender. Drain, cool, and cut in half. Transfer to a bowl.
Step 2
In a skillet over medium heat, fry the bacon slices cut into thin strips until crispy. Add the sliced onion and sauté, stirring, until soft, about 2–4 minutes. Remove from heat and stir in 3 tablespoons of vinegar and the mustard.
Step 3
Add the sauce with bacon to the warm potatoes and mix. Season with salt and pepper. Optionally, add more vinegar. Serve warm.
