Ingredients
- Pickled Chanterelles - 10.6 oz
- Olive Oil - 2 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- New Potatoes - 17.6 oz
- Chopped Sage Leaves - ¼ cup
- Sherry - 3 teaspoons
- Capers - 2 tablespoons
Step by Step guide
Step 1
Preheat the oven to 450 degrees Fahrenheit.
Step 2
Slice the mushrooms thinly and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper. Toss to combine.
Step 3
On another baking sheet, place the quartered unpeeled potatoes, drizzle with the remaining oil, season with salt and pepper. Toss to combine.
Step 4
Send both baking sheets to the oven for about 20 minutes until the potatoes and mushrooms are cooked through.
Step 5
Transfer the potatoes and mushrooms to a bowl and add the parsley, vinegar, and capers. Toss to combine.
