Ingredients
- Olive Oil - 3 tablespoons
- Red Onion - 1 head
- Canned roasted pepper - 1 piece
- Quinoa - 7.1 oz
- Vegetable Broth - 17 fl oz
- Parsley - 1 bunch
- Lemon Zest - 1 tablespoon
- Lemon Juice - 1 tablespoon
- Sugar - a pinch
- Halloumi Cheese - 8.8 oz
Step by Step guide
Step 1
Heat 1 tablespoon of oil in a medium-sized skillet.
Step 2
Sauté the onion and pepper for a few minutes, then add the quinoa and cook for another 3 minutes.
Step 3
Add the broth, cover, and reduce the heat to a simmer. Cook for 15 minutes, then add half of the parsley. Preheat the grill.
Step 4
Meanwhile, mix the lemon zest and juice with the remaining parsley and oil, along with a large pinch of sugar and salt. Grill the halloumi until golden brown and crispy. Serve the salad with grilled halloumi and dressing.
