Warm Salad with Chanterelles
Ingredients
- New Potatoes - 14.1 oz
- Chorizo - 4.6 oz
- Pickled Chanterelles - 8.8 oz
- Parmesan Cheese - 2.1 oz
- Garlic - 2 cloves
- Arugula - 2.5 oz
- Malt Vinegar - 2 tablespoons
- Olive Oil - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the young potatoes, cut them in half, and sauté in olive oil (peeling is optional) for about 10 minutes.
Step 2
Add the chanterelles and sauté for another 5 minutes.
Step 3
Add thin slices of chorizo and minced garlic, mix well, and remove from heat.
Step 4
In a salad bowl, combine arugula, salt, pepper, olive oil, wine vinegar, and the 'warm part' from the skillet. Top with grated Parmesan.
