Ingredients
- Green Figs - 4 pieces
- Pickled Chanterelles - 7.1 oz
- Marinated cherries - 8 pieces
- Pistachios - to taste
- Honey - 3 teaspoons
- Olive Oil - 4 tablespoons
- Meyer Lemon Juice - ½ teaspoon
- Mixed salad greens - 1 bunch
Step by Step guide
Step 1
Clean the mushrooms and slice them thinly. Sauté in butter until golden brown (if desired, you can add dried herbs, such as basil).
Step 2
In a pan, heat 1 tablespoon of olive oil and 2 teaspoons of honey. When the honey starts to bubble, sauté the fig pieces for 1 minute. Transfer the figs to a plate, and pour the oil with honey and fig juice from the pan into a bowl; this mixture will serve as the dressing base.
Step 3
Toast the pine nuts in the pan until they are golden.
Step 4
Make the dressing: fig juice from the pan, 3 tablespoons of olive oil, 1 teaspoon of honey, and ½ teaspoon of lemon juice. Mix until smooth.
Step 5
In a bowl, combine the salad greens, cherry tomatoes, mushrooms, and dressing. Top with figs and sprinkle with pine nuts.
