- Turnips - 7.1 oz
- Vegetable Oil - 1 fl oz
- Honey - 1.4 oz
- Ground Cumin - ½ teaspoon
- Couscous - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Mint - 1 bunch
- Feta cheese - 3.5 oz
- Meyer Lemon Juice - 1 teaspoon
- Grated Ginger Root - ½ teaspoon
Step by Step guide
Step 1
Cut the carrots into medium slices, add vegetable oil, a little honey, and cumin. Roast the carrots at 356°F for about 20 minutes.
Step 2
Meanwhile, pour boiling water over the couscous and let it sit for 10 minutes.
Step 3
Cool the roasted carrots, then add the steamed couscous, grated ginger, lemon juice, and finely chopped mint.
Step 4
Dress the salad with vegetable oil, mix well, and sprinkle with feta cheese.
