Warm wild rice salad with dried apricots and pistachios
Ingredients
- Water - 7 cups
- Wild rice - 1 cup
- Olive Oil - 2 teaspoons
- Spanish onions - 1 head
- Garlic - 2 cloves
- Orange Bell Peppers - 1 piece
- Ground Cumin - 1½ teaspoons
- Dried Apricots - 2.8 oz
- Orange juice concentrate - ½ cup
- Salt - to taste
- Ground Black Pepper - to taste
- Chopped Green Onions - 1.4 oz
- Pistachios - 1.9 oz
Step by Step guide
Step 1
Bring water to a boil, add wild rice, cover, and simmer for 45–55 minutes until cooked. Drain.
Step 2
Heat olive oil in a skillet over medium heat. Add finely chopped onion and sauté until soft for 2–3 minutes. Add chopped bell pepper, minced garlic, and cumin. Sauté, stirring, for 1 minute. Add chopped dried apricots and orange juice. Season with salt and pepper and cook for 1–2 minutes until the apricots are soft.
Step 3
Add wild rice, mix, remove from heat, and stir in green onions and lightly crushed pistachios.
