- Duck wings - 17.6 oz
- Chicken Broth - 12 cups
- Sesame Oil - 1 tablespoon
- Shallot - 1.2 oz
- Ginger - 3.5 oz
- Garlic - 1 clove
- Pork Mince - 8.8 oz
- Chili jam - 1 tablespoon
- Soy Sauce - 2 tablespoons
- Sugar - 1 teaspoon
- Tahini - 0.3 cups
- Salt - 2 teaspoons
- Udon Noodles - 17.6 oz
Step by Step guide
Step 1
Place the chicken wings in a pot, cover with chicken broth, bring to a boil, and simmer over medium heat until 1/3 of the liquid evaporates. Then remove from heat and strain.
Step 2
In a skillet, heat the oil over medium heat and sauté 2 tablespoons of chopped shallots and minced ginger. Cook, stirring, until fragrant. Add the minced pork and chili sauce. Cook for 3-4 minutes, then pour in the strained broth, add soy sauce, sugar, tahini, and season with salt. Bring to a boil, reduce heat, and simmer, stirring, for another 3 minutes. Remove from heat and keep warm.

Cook the noodles according to the package instructions. Divide the cooked noodles among 4 plates. Pour the sauce from the skillet over each plate, sprinkle with chopped shallots, and serve drizzled with chili oil. Enjoy your meal!
