Ingredients
- Buckwheat Groats - 1 cup
- Chicken Broth - 1 cup
- Frozen Vegetable Mix 'Lecho' - 1 cup
- Chopped Sage Leaves - 1 tablespoon
- Fresh Mint - 1 tablespoon
- Olive Oil - 1 tablespoon

Step 1
The vegetable mix can be any variety, but fresh is definitely better than frozen. I recommend using equal parts zucchini, tomatoes, carrots, celery, and squash, lightly sautéed in olive oil.
Step 2
Add the wheat groats to the pan, pour in the broth (chicken broth can be used if vegetable broth is not available for a heartier dish), cover with a lid, and cook on low heat until done (20–25 minutes).
Step 3
Remove from heat, add the chopped herbs, and serve.
