- Cracked Wheat - 2 cups
- Beef Kidneys - 7.1 oz
- Veal Liver - 7.1 oz
- Carrot - 7.1 oz
- Fatty Beef - 3.5 oz
- Onion - 2 heads
- Dill - to taste
- Parsley - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Pour the cracked wheat into a pot, add 1 liter of boiling water, salt it, and cook, stirring, for 15–20 minutes.
Step 2
When the porridge thickens, cover the pot with a lid and place it in a preheated oven for 40 minutes.
Step 3
Wash the carrot, peel it, and cut it into strips.
Step 4
Peel the onion, wash it, and cut it into rings.
Step 5
Wash the herbs and chop them finely.
Step 6
Rinse the lungs and liver, and slice them.
Step 7
In heated fat, sauté the carrot and onion until golden, season with salt and pepper, and add the lungs and liver.
Step 8
Fry for 5–7 minutes.
Step 9
Pour in 100 ml of water and simmer for 25 minutes.
Step 10
Mix the cooked porridge with the lungs, liver, and sautéed vegetables, serve on plates, and sprinkle with chopped dill and parsley.
