Description
Any meaty fish works well for this recipe, preferably one that isn't too bony. If you have trouble finding rosemary, you can substitute it with tarragon or thyme. And don't overcook the fish in the oven, or it will become dry, and even bacon won't save it.)

- Fillet of Sturgeon - 17.6 oz
- Bacon - 3.5 oz
- Fresh Rose Hips - 1 tablespoon
- Garlic - 1 clove
- Olive Oil - 5 tablespoons
- Ocean salt - to taste
- Beans - 1 piece
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Wash the fish, dry it with a paper towel, remove the bones, and cut it into cubes about 5x5 cm.
Step 3
Crush the rosemary with the garlic and a pinch of salt in a mortar, then add the olive oil.
Step 4
Coat the pieces of fish in this marinade.
Step 5
Remove the crusts from the bread (I usually don't remove them), and break it into small pieces.
Step 6
Thread 2–3 pieces of fish and bread alternately onto skewers.
Step 7
Line a baking sheet with parchment paper, place the fish and bread skewers on it, top with pieces of bacon, and drizzle with the remaining olive oil and rosemary marinade.
Step 8
Bake in the preheated oven for 10–15 minutes.
