Ingredients
- Flounder - 8 pieces
- Smoked Salmon Flavored Croutons - 3.5 oz
- Onion - 1 head
- Vinegar essence - 2 tablespoons
- Dry White Wine - 10 fl oz
- Sour Cream - 7.1 oz
- Fish Oil - 7 fl oz
- Basil - to taste
Step by Step guide
Step 1
Rinse the flounder fillet, season with salt and pepper, place thin slices of salmon on top, and fold in half.
Step 2
Finely chop the onion, sauté it, add vinegar and wine. Cook until the mixture reduces by about half. Pour in the stock, add the fish to the mixture, and cook for fifteen minutes.
Step 3
Remove the fish from the sauce and place it in a warm place. Stir sour cream into the stock and bring the mixture to a boil. Season with salt and pepper, and add basil. Drizzle the fish with the resulting sauce and serve.
