Ingredients
- Porcini Mushrooms - 7.1 oz
- Quail Egg - 2 pieces
- Prunes - 1.8 oz
- Dry White Wine - 1 fl oz
- Sugar - 0.4 oz
- Starch film - 0 oz
- Potato - 2 pieces
- Rosemary - 1 stalk
- Garlic - 2 cloves
- Chopped Sage Leaves - 2 pieces
- Olive Oil - ½ spoons
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
For the sauce, place the prunes in a saucepan, pour in the wine, add 50 ml of water and sugar, season lightly with salt, bring to a boil, and simmer for twenty minutes. Strain through a sieve. Add starch to thicken.
Step 2
Cut the white mushrooms into large pieces. Remove the meat from the quail carcass, but leave the legs intact. Cut the bird into four pieces.
Step 3
Boil the potatoes for five minutes. Cut each potato into four pieces.
Step 4
Sauté the potato wedges and quail in olive oil with rosemary, garlic, and sage until golden brown. Once the quail is flipped to the other side, add the white mushrooms to the pan. Season with salt and pepper.
Step 5
Place the quail with potatoes on plates and add the sauce.
