White Shark in Fennel Essence

Ingredients

  • Fennel - 1 piece
  • White Shark - 12 oz
  • Chicken Broth - 16 fl oz
  • Garlic - 1 clove
  • Olive Oil - 1 tablespoon
  • 33% Cream - 8 fl oz

Step by Step guide

Step 1

Cut the shark fillet into portion-sized pieces.

Step 2

Wash the fennel and trim the leaves, reserving a few for garnish. Cut off the top from the bulb and slice it thinly, then set aside. Chop the remaining leaves and bulb into small cubes to make about 120 ml.

Step 3

Heat the broth with the diced fennel and minced garlic. Reduce the heat to low and keep it warm.

Step 4

Add the shark to the broth, cover with a lid, and cook for 10 minutes until the meat turns white. Transfer the fish to a heatproof dish and keep warm, covered with foil.

Step 5

Add the cream to the hot broth, slightly increase the heat, and cook uncovered, stirring, for 20-25 minutes until the sauce reduces by half.

Step 6

Arrange the sliced fennel on 4 plates, top with the shark fillet, and drizzle with the sauce. Garnish with fennel leaves.
