Ingredients
- Olive Oil - 6 tablespoons
- Cauliflower - 1 head
- Meyer Lemon Juice - 3 tablespoons
- Butter - 2.1 oz
- Sugar - 1 tablespoon
- Red Long Chili Peppers - 1 teaspoon
- Green peppercorns - 6 pieces
- Bay leaf - 1 piece
- Paprika - 1 teaspoon
- Wheat Flour - 2 tablespoons
- Milk - 5 fl oz
- Light Beer - 7 fl oz
- Mustard Greens - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Cheshire Cheese - 2 cups
Step by Step guide
Step 1
In a large pot, pour in 2.5 liters of water and bring it to a boil. Add 3 tablespoons of salt, 5 tablespoons of olive oil, all the lemon juice, 30 grams of butter, sugar, ground red pepper, black peppercorns, and the bay leaf to the boiling water. Stir the resulting 'broth' until the butter melts.
Step 2
Once the butter has melted, place the whole cauliflower (after trimming the leaves) into the mixture, with the stem side up. You can slightly reduce the heat and let the cauliflower simmer in the gentle broth for about 20-25 minutes. The well-cooked cauliflower should become tender and soft - when checked with a knife, it should pierce through without resistance.
Step 3
While the cauliflower is simmering, preheat the oven to 392°F.
Step 4
When the cauliflower is soft and has absorbed the oils and spices, drain the 'broth' through a colander. Place the cauliflower in a baking dish - for cakes or lasagna. Generously brush it with olive oil and sprinkle with paprika.
Step 5
Send the prepared cauliflower to the oven for about 30 minutes. In the meantime, we will prepare the sauce.
Step 6
In a small saucepan over medium heat, melt 30 grams of butter.
Step 7
Add the flour and mix it thoroughly to form a paste. Keep it on the heat for a couple of seconds until a nutty aroma appears.
Step 8
Slowly pour in the milk and stir it until the sauce thickens (about 2 minutes).
Step 9
Add the beer and stir until the sauce becomes homogeneous. Wait for the sauce to thicken, about another 5 minutes.
Step 10
Add mustard to the sauce, along with salt and pepper to taste.
Step 11
Remove from heat and stir in two cups of grated cheddar cheese.
Step 12
Serve the finished dish in a large deep plate: first pour in the sauce, and then place the cauliflower in the center of the cheesy beer 'lake.'
