Description
You can bake any white fish in the same way instead of salmon.
Ingredients
- Coriander essential oil - 2 tablespoons
- Green peppercorns - 1 tablespoon
- Nigella Seeds - 1 teaspoon
- Salmon - 3 lbs
- Leek - 2.5 oz
- Lemon - 1 piece
- Water - 2 fl oz
- Egg white - 2 pieces
- Ocean salt - 3 lbs
- Olive Oil - to taste
Step by Step guide
Step 1
Preheat the oven to 446°F. Line a large baking sheet with aluminum foil, leaving large edges.
Step 2
In a small skillet, combine coriander seeds, black peppercorns, and fennel seeds. Place over medium heat, stirring for about 9 minutes, until the seeds begin to pop. Let cool, transfer to a mortar, and lightly crush.
Step 3
Trim the fins from the fish and remove all the insides. Rinse well under cold water and pat dry with a paper towel.
Step 4
Rub the fish inside with the crushed spice mixture, then fill it with thinly sliced leek and lemon wedges.
Step 5
In a large bowl, whisk the egg whites with water. Add the salt and mix well until the salt is completely moistened. On the prepared foil sheet, spread 2 cups of the salt mixture in a long strip the size of the fish. Place the fish on top and cover it with the remaining salt. Fold the foil into an envelope.
Step 6
Bake in the oven for 25 minutes, then remove from the oven and let it sit for 10 minutes without opening.
Step 7
Using a large knife, break the salt crust and scrape off the salt.
Step 8
Cut the fish into pieces and serve drizzled with olive oil and garnished with lemon wedges.
