Ingredients
- Red Grape Juice - 1 piece
- Fennel - 2 pieces
- Italian chopped parsley - 3.5 oz
- Mint Leaves - 0.6 oz
- Olive Oil - to taste
- Ocean salt - to taste
Step by Step guide
Step 1
Peel the grapefruit, cut off all the white pith, and carefully cut out the segments. Transfer to a bowl. Squeeze the juice from the remaining part of the grapefruit and pour it into a separate container. Cover and refrigerate.
Step 2
Slice the fennel into very thin slices and mix with the parsley and mint leaves in a large bowl. Cut the grapefruit segments into small pieces and add them to the greens. Toss and plate. Drizzle with olive oil and grapefruit juice. Sprinkle with sea salt and serve.
