Ingredients
- Beetroot - 2 pieces
- Coarse Salt - a pinch
- Olive Oil - 30 fl oz
- Yellow Beets - 2 pieces
- Potato - 7.1 oz
- Onion - to taste
- Ground Black Pepper - to taste
- Brussels Sprouts - 15.9 oz
- Parsnip - 2 pieces
- Rosemary - 1 tablespoon
- Chopped Sage Leaves - 1 tablespoon

Step 1
Preheat the oven to 200˚C. Wrap each beetroot individually in aluminum foil and place on a 22x32 cm baking sheet; bake for about 1 hour. Allow to cool slightly, unwrap, peel, and cut into pieces about 2.5 cm. Transfer to a large bowl and cover with plastic wrap.
Step 2
Mix the potato and onion with half of the oil, sprinkle with salt and pepper, and spread on a baking sheet. On another baking sheet, arrange the Brussels sprouts and parsnip, drizzle with the remaining oil, and sprinkle with salt and pepper. Bake until golden brown and the vegetables are tender, about 45 minutes to 1 hour; transfer to the bowl with the beetroot. Add rosemary, thyme, salt, and pepper.
