Description
"Toshikoshi Soba" translates to "soba of the year passing." This noodle dish was traditionally prepared to quickly feed the family after their New Year's visit to the temple. Since then, buckwheat noodles with broth have become the main festive treat for the Japanese and the last dish to be eaten before midnight: they believe that this way they can smoothly transition into the new year, leaving all hardships behind, and that things will go much better in the future. The noodles must be thick and long: the longer they are, the longer the lives of those gathered at the table. Therefore, on the eve of the holiday, super-long handmade soba—up to two meters or more—is specially ordered. But that's not all: to gain longevity, one must slurp the noodles in whole, rather than eating them in pieces.
Ingredients
- Pork tenderloin - 10.6 oz
- Soba Noodles - 14.1 oz
- Napa Cabbage - 7.1 oz
- Peeled Cooked Shrimp - 7.1 oz
- Scallions - 7.1 oz
- Orange Bell Peppers - 1 piece
- Vegetable Oil - 1 tablespoon
- Soy Sauce - 3 spoons
- Sugar - 1 tablespoon
- Chicken Egg - 1 piece
- Pickled garlic - to taste
Step by Step guide
Step 1
Heat half of the vegetable oil in a wok and sauté the pork in it.
Step 2
Boil the noodles in boiling water for 3 minutes, then drain the water.
Step 3
Combine the pork and noodles with the remaining ingredients.
Step 4
Sauté this mixture in the remaining hot oil in a wok.
Step 5
Quickly mix to ensure all ingredients are cooked evenly. Serve garnished with finely chopped green onions.
