Ingredients
- Passion Fruit - 12 pieces
- Dark rum - 5 fl oz
- Bacardi Lemon Rum - 3 fl oz
- Absinthe - 1 fl oz
- Meyer Lemon Juice - 3 fl oz
- Bananas - 1.1 oz
- Granulated sugar - 24 pieces
- Sugar - 2.1 oz
Step by Step guide
Step 1
Cut the passion fruit in half and scoop out all the seeds. Add 20 small sugar cubes. Pour in 100 ml of boiling water and mash with a spoon until the sugar dissolves in the passion fruit. Strain the resulting syrup through a sieve.
Step 2
Pour the syrup into a pitcher filled with ice cubes, add the dark and light rum, as well as 20 ml of absinthe. Squeeze the juice from the lemon and add granulated sugar. Stir everything quickly and thoroughly with a bar spoon.
Step 3
Cut a piece of banana into eight slices. Arrange them on teaspoons, adding one or two pieces of sugar on top. Drizzle a little absinthe over the sugar and banana.
Step 4
Pour the cocktail into glasses filled with ice. Top each glass with a teaspoon of the banana and sugar mixture. Ignite the absinthe.
