Ingredients
- Cod - 28.2 oz
- Spanish onions - 1 head
- Mild Chili Spice - 1 piece
- Carrot - 2 pieces
- Bay leaf - 6 pieces
- Baking Tomatoes - 15.9 oz
- Sugar - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Garlic - 3 cloves
- Chopped Sage Leaves - 1 cup
- Meyer Lemon Juice - ¼ cup
Step by Step guide
Step 1
Wash the fish fillet and pat it dry. Cut into small pieces. Peel the onion and carrot, and slice them into thin rounds. Remove the seeds from the chili pepper and slice it into thin rings.
Step 2
In a deep skillet, place half of the fish, then half of the vegetables and a couple of bay leaves on top. Then add the next layer of fish and vegetables, along with the remaining bay leaves.
Step 3
Blend the tomatoes in a blender. Add vegetable oil, sugar, and salt to taste to the resulting puree. Pour the tomato puree over the fish and vegetables. Bring to a boil and cook on high heat for 7–10 minutes.
Step 4
Peel the garlic, crush it in a mortar with the parsley, add a pinch of sugar and lemon juice. Serve the fish with vegetables on a plate, seasoned with the prepared sauce.
