- Young Carrots - 2 lbs
- Olive Oil - 3 tablespoons
- Cumin Seeds - 2 teaspoons
- Cilantro - ½ bunch
- Salt - to taste
Step by Step guide
Step 1
Trim the green tops of the carrots, leaving 1–2 cm tails, and wash them. Place in a pot of boiling water and cook on low heat for 2–3 minutes. Drain in a colander.
Step 2
Preheat the oven to 392°F. Arrange the carrots in a large baking dish, drizzle with olive oil, sprinkle with cumin, and season with salt. Roast for 20–25 minutes until the carrots are golden brown.
Step 3
Serve garnished with finely chopped cilantro.
