- New Potatoes - 4 lbs
- Champagne Vinegar - ½ cup
- Olive Oil - ½ cup
- Green onion tops - 4 pieces

Step 1
Slice the potatoes into rounds and boil in salted water until tender, about 10–15 minutes. Drain and let dry.

Meanwhile, in a bowl, mix the vinegar and finely chopped green onions. Season with salt and pepper.
Step 3
