  • Coarse Salt - to taste
  • Ground Black Pepper - to taste
  • New Potatoes - 4 lbs
  • Champagne Vinegar - ½ cup
  • Olive Oil - ½ cup
  • Green onion tops - 4 pieces

Step by Step guide

Step 1

Slice the potatoes into rounds and boil in salted water until tender, about 10–15 minutes. Drain and let dry.

Step 2

Meanwhile, in a bowl, mix the vinegar and finely chopped green onions. Season with salt and pepper.

Step 3

Add the hot potatoes to the dressing and stir. Let cool.

Step 4

Once the salad has cooled, add the olive oil, and season with salt and pepper.
