Zuban in Sauce
Ingredients
- Cotton Oil - 25 fl oz
- Zuban Fish - 31.7 oz
- Wheat Flour - 2 tablespoons
- Chopped Sage Leaves - 2 tablespoons
- Onion - 1 head
- Garlic - 2 cloves
- Saffron - 0.2 strands
- Fish Oil - 17.6 oz
- Canned Mushroom Soup - 3.5 oz
- Bay leaf - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Heat olive oil in a skillet, reserving 3 tablespoons for later. Season the zuban (150 grams each) with salt on both sides and dust with flour. Sauté the fish in the skillet for 4–5 minutes until golden brown.
Step 2
Now transfer it to a high-sided baking dish. In the skillet, heat the remaining oil and sauté the onion and garlic over low heat, stirring occasionally, for about 10 minutes. Remove from heat when the first signs of browning appear.
Step 3
In a mortar, grind the onion and garlic with a few strands of saffron and a pinch of salt, add 2 tablespoons of broth, and pass the mixture through a mill into a bowl.
Step 4
Return the skillet to the heat and add 1 tablespoon of flour. Sauté, stirring constantly, for two minutes. Gradually add the remaining broth in small portions, then the mixture from the mortar.
Step 5
Cook, stirring, for another couple of minutes and then pour the resulting sauce over the fish.
Step 6
Sprinkle with parsley, add the peas and bay leaf, and cook over medium heat for 10 minutes. Remove the bay leaf from the finished dish and serve in the same dish.
