Zucchini and Orzo Salad
Ingredients
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Orzo Pasta - 1 cup
- Olive Oil - 1½ tablespoons
- Young zucchini - 2 pieces
- Garlic - 1 clove
- Fresh basil leaves - ½ cup
- Champagne Vinegar - 2 tablespoons
Step by Step guide
Step 1
In boiling salted water, cook the pasta until al dente. Drain and dry well, then cool.
Step 2
In a large skillet, heat 1 tablespoon of oil over medium heat. Cut the zucchinis lengthwise into 4 pieces, then into thin slices and place them in the heated skillet. Add the minced garlic, season with salt and pepper. Cook, stirring, for 4–6 minutes, until the zucchinis are tender but still slightly crisp inside.
Step 3
Transfer the pasta to a bowl and add the zucchinis, basil, vinegar, and remaining oil. Season with salt and pepper and mix well.
