Zucchini and Parmesan Salad

Ingredients

  • Extra virgin olive oil - ⅓ cup
  • Freshly squeezed lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground Black Pepper - ½ teaspoon
  • Red pepper flakes - ¼ teaspoon
  • Zucchini - 2 lbs
  • Basil - 1.2 oz
  • Toasted Pine Nuts - ¼ cup
  • Grated Parmesan cheese - to taste

Step by Step guide

Step 1

To prepare the zucchini and Parmesan salad, mix the oil, lemon juice, 1 teaspoon of salt, ½ teaspoon of black pepper, and red pepper in a small bowl.

Step 2

Using a vegetable peeler, slice the zucchini into thin ribbons.

Step 3

Place the ribbons in a large bowl. Add the basil, nuts, and the prepared dressing, and mix well. Season with salt and pepper.

Step 4

Using the vegetable peeler, shave Parmesan over the top of the dish. Serve immediately.
