Ingredients
- Extra virgin olive oil - ⅓ cup
- Freshly squeezed lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
- Red pepper flakes - ¼ teaspoon
- Zucchini - 2 lbs
- Basil - 1.2 oz
- Toasted Pine Nuts - ¼ cup
- Grated Parmesan cheese - to taste
Step by Step guide
Step 1
To prepare the zucchini and Parmesan salad, mix the oil, lemon juice, 1 teaspoon of salt, ½ teaspoon of black pepper, and red pepper in a small bowl.
Step 2
Using a vegetable peeler, slice the zucchini into thin ribbons.
Step 3
Place the ribbons in a large bowl. Add the basil, nuts, and the prepared dressing, and mix well. Season with salt and pepper.
Step 4
Using the vegetable peeler, shave Parmesan over the top of the dish. Serve immediately.
