Ingredients
- Courgette - 4 pieces
- Ground meat - 15 oz
- Olive Oil - 1 tablespoon
- Onion - ½ head
- Melted Cheese - 5 oz
- Pepperoni - 0 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 375°F.
Step 2
Cut the zucchini in half lengthwise. Use a spoon to scoop out some of the flesh, leaving about 1 cm of flesh around the edges and at the bottom for stability. Keep the flesh.
Step 3
In a large deep skillet, heat the olive oil over medium heat.
Step 4
Sauté the ground meat with the diced onion until golden brown, about 7–10 minutes.
Step 5
Add the reserved zucchini flesh to the meat. Continue to sauté for 5–7 minutes, until the meat is cooked and the onion is translucent.
Step 6
Season with salt and pepper to taste.
Step 7
Place the zucchini boats on a baking sheet lined with parchment paper. Fill the boats with the meat mixture.
Step 8
Sprinkle with grated mozzarella and top with slices of pepperoni.
Step 9
Bake for 20 minutes if you want the boats to remain firm, or longer if you prefer the zucchini to be soft.
Step 10
Transfer the boats to a serving board in the shape of a Hogwarts fleet. Serve hot.
