Description

Any variety of zucchini is suitable for this casserole. If the skin is soft, you can leave it unpeeled. If you want to make the dish more calorie-dense, you can add finely chopped bacon. The casserole turns out juicy, uniform, hearty, and very festive. I recommend it!

Ingredients

  • Courgette - 2 lbs
  • Onion - 2 pieces
  • Egg white - 4 pieces
  • Olive Oil - 1 fl oz
  • Feta cheese - 10.6 oz
  • Garlic - 2 cloves
  • Herbs - 1 bunch

Step by Step guide

Step 1

Finely chop the onion and garlic and sauté in oil until golden, then add bacon.

Step 2

Grate the zucchini on a coarse grater and lightly sauté in a pan. Let it sit for about 10 minutes to drain excess moisture.

Step 3

Combine the sautéed onion, zucchini, add crumbled cheese, herbs, and pour in the beaten eggs.

Step 4

Grease a baking dish with oil, fill it with the mixture, sprinkle with grated cheese, and bake in the oven for 30 minutes at 374°F.

Let the casserole cool slightly, cut into portions, and serve drizzled with oil.
