Ingredients
- Zucchini - 2 pieces
- Onion - 1 piece
- Fresh Thyme - 1 sprig
- Salt - to taste
- Vegetable Oil - 5 tablespoons
- Carrot - 1 piece
- Tomato - 1 piece
- Ground Black Pepper - to taste
- Garlic - 4 cloves
- Sugar - to taste
Step by Step guide
Step 1
Chop the carrot and onion into medium cubes and place them in a glass microwave-safe bowl. Microwave on high for 7 minutes.
Step 2
Cube the zucchini as well. Also cube the tomato (but first blanch it in boiling water to remove the skin). Return to the microwave for another 8 minutes.
Step 3
Meanwhile, heat the oil in a saucepan and add the garlic and thyme sprig. As soon as it starts to simmer, remove from heat.
Step 4
Pour the oil over the sautéed vegetables. Add salt and pepper. If you think there isn't enough liquid, add a little water. Return to the microwave for about 8-10 minutes. You will see that the vegetables will become soft. It all depends on the power of your microwave.
Step 5
Next, let this 'stew' cool down, transfer it to a separate bowl, and blend it with an immersion blender. You can also use a food processor, but the immersion blender makes the caviar airy.
Step 6
Finally, transfer to sterilized jars and seal. Enjoy your meal!
