Description
Zucchini in Tomato Sauce
Ingredients
- Sugar - 1 teaspoon
- Safflower Oil - 3 tablespoons
- Tomatoes - 2 lbs
- Salt - to taste
- Gruyère cheese - 5.3 oz
- Butter - 7.1 oz
- Courgette - 4 lbs
Step by Step guide
Step 1
Peel the zucchini and cut it into long thin slices. Grate the cheese. Prepare the tomato sauce: heat the sunflower oil in a pan, add the peeled and finely chopped tomatoes, and cook for another 10 minutes, mashing them with a spatula. Let the sauce cool slightly, then blend it into a puree. Add sugar and salt. Mix again.
Step 2
Take a large pot of salted water and bring it to a boil. Boil the zucchini slices for 5 minutes. Drain the water and let them dry in a colander.
Step 3
Grease a baking dish with butter. Layer the zucchini, sprinkle with cheese, pour over the tomato sauce, and top with the remaining cheese and pieces of butter.
Step 4
Bake for 15-20 minutes at 356°F until the crust is golden. Serve immediately in the same dish.
