Zucchini noodles are a healthy and delicious alternative to traditional pasta. They are made by spiralizing fresh zucchini into thin strands and can be served with a variety of sauces and toppings. Ingredients

  • Vegetable Oil - 2 fl oz
  • Rice Vinegar for Sushi - 1 fl oz
  • Honey - 1.1 oz
  • Sriracha - 1 fl oz
  • Soy Sauce - 2 fl oz
  • Sesame Oil - 0 fl oz
  • Ginger - 0.4 oz
  • Tofu - 10.6 oz
  • Spanish onions - 2.8 oz
  • Carrot - 1 piece
  • Cashew - 1.8 oz
  • Orange Bell Peppers - 1 piece
  • Sweet Corn Sticks - 1 piece
  • Courgette - 28.2 oz
  • Cilantro - to taste
  • Lime - to taste

Prepare all the ingredients.

Cut the tofu into small cubes.

Peel the ginger and cut it into small cubes.

Combine vegetable oil (15 ml), sesame oil, vinegar, honey, sriracha, soy sauce, and ginger.

Transfer the sliced tofu into the marinade and let it marinate for 15 minutes.

Slice the onion and carrot into thick strips. Remove the seeds from the pepper and cut it into strips as well.

Cut the kernels off the corn cob.

Coarsely chop the cashews.

Grate the zucchini using a Korean-style grater along the length, or cut it into thin long strips with a knife. There is no need to grate the center of the zucchini with the seeds.

Use a slotted spoon to remove the tofu from the marinade and pat it dry with a paper towel.

In a large skillet, heat vegetable oil and fry the tofu until golden brown. Then, remove the tofu from the skillet and set it aside.

Add cashews, corn, onion, and carrot to the skillet and sauté for 3–4 minutes, stirring occasionally.

Add the pepper and sauté for another 2 minutes.

Add the zucchini noodles, return the tofu and marinade. Stir-fry until the noodles are slightly softened.
