Description
A hybrid of Belarusian draniki and Greek kolokithokeftedes — zucchini patties with cheese. These vegetable patties pair wonderfully with a tangy dairy companion, so feel free to add a bit of feta or any other brined cheese to the recipe. The key to this recipe is not to forget to squeeze out the excess juice from the potatoes and zucchini. This simple recipe comes with a detailed video instruction.
Ingredients
- Courgette - 3 pieces
- Potato - 2 pieces
- Chicken Egg - 2 pieces
- Cheese Spread - 1.1 oz
- Wheat Flour - 3 spoons
- Olive Oil - 3 spoons
- Salt - to taste
Step by Step guide
Step 1
Peel the zucchini and grate it using a medium grater.
Step 2
Place in a bowl, sprinkle with salt, and mix well. Let the zucchini sit for 10 minutes.
Step 3
When the liquid is released, thoroughly squeeze the zucchini. The juice will not be needed.
Step 4
Do the same with the potatoes — grate them, season with salt, and squeeze out the excess moisture.
Step 5
Grate the cheese on a coarse grater.
Step 6
Add the eggs, grated cheese, and 3 tablespoons of flour to the well-squeezed vegetables, and mix well.
Step 7
Shape the mixture into small patties and coat them thoroughly with flour.
Step 8
Fry the patties on both sides in a skillet heated with oil.
