Zucchini Ratatouille with Rice
Ingredients
- Salt - to taste
- Courgette - 1½ kg
- Marinated cherries - 14 pieces
- Garlic - 1 clove
- Onion - 1 piece
- Olive Oil - 4 spoons
- Long-Grain Rice - 4 spoons
Step by Step guide
Step 1
Bring a large pot of water to a boil. Add the rice, allow it to come back to a boil, then reduce the heat and cook for 15 minutes, until the rice is tender.
Step 2
Meanwhile, finely chop the onion and garlic. Peel the tomatoes and chop them as well. Peel the zucchini and cut it into cubes.
Step 3
Drain the water from the rice, rinse it under cold water, and let it dry in a colander.
Step 4
Heat olive oil in a skillet, then add the onion and garlic to sauté over low heat for 2 minutes. Next, add the tomatoes and cook for another 5 minutes. Then, add the zucchini to the same skillet, season with salt, cover, and cook for 35 minutes, stirring occasionally. Finally, add the rice, mix well, and serve immediately.
