Ingredients
- Skin-On Chicken Breasts - 1 piece
- Young zucchini - 2 pieces
- Hard Cheese - 1.8 oz
- Garlic - 2 cloves
- Chipotle Pepper Paste - ½ tablespoon
- Fresh basil leaves - to taste
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash and slice the zucchinis lengthwise into 0.5 cm thick slices, place them on a baking sheet lined with parchment paper, lightly brush with olive oil and sprinkle with salt.
Step 2
Bake in the oven at 180°C (356°F) for 6-8 minutes, until the zucchinis become softer and easier to roll.
Step 3
Cut the chicken breast into thin longitudinal slices, slightly pound them, season with salt and pepper. Add minced garlic and let marinate for a while.
Step 4
Place strips of chicken on the zucchini slices, sprinkle with grated cheese, add basil, and a bit of sauce, then roll up the zucchini rolls and secure them with toothpicks.
Step 5
Bake the zucchini rolls at 180°C (356°F) for 25 minutes.
