Ingredients
- Chicory - 3 pieces
- Courgette - 1 piece
- Romaine lettuce - 7.1 oz
- Broccoli - 14.1 oz
- Salt - to taste
- Chervil - 1 bunch
- Onion - 2 heads
- Pork Blood - 8.8 oz
- Champagne Vinegar - 4 tablespoons
- Ground Black Pepper - to taste
- Vegetable Oil - 3 tablespoons
- Sugar - a pinch
Step by Step guide
Step 1
Divide the broccoli into florets and blanch in salted water for 5 minutes. Drain and rinse the broccoli with cold water.
Step 2
Chop the chervil, reserving a few sprigs. Dice the onion and ham. Mix all the ingredients together, except for the chervil.
Step 3
Prepare the dressing with vinegar, vegetable oil, pepper, salt, sugar, chopped chervil, and water. Drizzle it over the salad and garnish with chervil sprigs.
Step 4
Cut the chicory leaves in half crosswise. Tear the lettuce into small pieces and slice the zucchini into thin rounds.
