Description

If you have a full day of training ahead, serve the meatballs with spaghetti made not from zucchini but from whole grain pasta.

Ingredients

  • Courgette - 4 pieces
  • Grated Pecorino Pepato Cheese - to taste
  • Pork Mince - 17.6 oz
  • Onion - 2 pieces
  • Garlic - 4 cloves
  • Worcestershire Sauce - 2 spoons
  • Chicken Egg - 1 piece
  • Ocean salt - to taste
  • Ground Black Pepper - to taste
  • Olive Oil - to taste
  • Tomato Puree - 1 tablespoon
  • Baking Tomatoes - 28.2 oz
  • Dried Rosemary - ½ spoons
  • Balsamic Vinegar - ½ spoons

Step by Step guide

Step 1

Spiralize 4 zucchinis using a spiralizer, vegetable peeler, or mandoline.

Step 2

Place the ground turkey in a bowl, add one chopped onion, two garlic cloves, Worcestershire sauce, a beaten egg, salt, and pepper. Mix thoroughly.

Step 3

With wet hands, shape the mixture into 20 meatballs and place them on a plate. Cover with plastic wrap and refrigerate for 30 minutes.

Step 4

Prepare the tomato sauce: heat a large skillet over medium heat and add a little olive oil. Once the oil is hot, add the onion and sauté until softened, about 5–6 minutes, then add the garlic and sauté for another minute.

Step 5

Stir in the tomato puree and simmer for another 2 minutes, then add the chopped tomatoes, oregano, balsamic vinegar, salt, and pepper. Mix everything together and simmer for 10 minutes, until the sauce thickens slightly.

Step 6

To prepare the meatballs, place a skillet over medium heat and pour in some oil. Fry the meatballs in the hot oil in batches, turning them frequently to brown on all sides. Transfer them to a skillet with tomato sauce and simmer for another 10 minutes, turning occasionally, until the meatballs are fully cooked (if the sauce becomes too thick, add 50-100 ml of water to it).

Step 7

Add another teaspoon of oil to the skillet where the meatballs were fried, and sauté the zucchini spaghetti over medium heat, stirring occasionally. After 3–5 minutes, the spaghetti will become slightly softer.

Step 8

Place the zucchini noodles into serving bowls and top with the meatballs. If desired, sprinkle with Parmesan cheese.
