Ingredients
- Olive Oil - 6 tablespoons
- Mini vegetables - 14.1 oz
- Garlic - 2 cloves
- Capers - 2½ tablespoons
- Red Wine Vinegar - 2 tablespoons
- Mint Leaves - 0.7 oz
- Pizza Mozzarella Cheese - 8.8 oz
- Mixed tomatoes of different colors - 10.6 oz
- Arugula - 1.9 oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the halved zucchini and sauté until golden brown. Transfer to a paper towel.
Step 2
In a clean skillet, heat the remaining oil and add the thinly sliced garlic and capers. Sauté for no more than 1 minute to avoid burning the garlic. Remove from heat and add vinegar, 10 mint leaves, and 2 teaspoons of water. Lightly season with pepper.
Step 3
Arrange the zucchini, chopped mozzarella, sliced tomatoes, remaining mint, and arugula on 4 plates. Drizzle with the dressing.
