Ingredients
- Salt - to taste
- White bread - 1.8 oz
- Olive Oil - 3 tablespoons
- Tarragon - 8 pieces
- Tomatoes - 3 pieces
- Courgette - 6 pieces
- York Ham - 10.6 oz
Step by Step guide
Step 1
Cut the zucchini lengthwise. Finely chop the ham. Peel the tomatoes and chop them as well. Finely chop the tarragon.
Step 2
Bring a large pot of salted water to a boil, add the zucchini, and wait for the water to boil again. Cook for 10 minutes. Transfer the zucchini to a plate lined with a paper towel. Once they have cooled enough, use a teaspoon to scoop out the flesh without damaging the skin. Chop the flesh.
Step 3
Mix the ham, tomatoes, zucchini flesh, and tarragon. Add salt to taste. Fill the zucchini skins with the mixture. Pour oil into a baking dish and arrange the zucchini boats in a single layer, tightly packed with the filling facing up. Sprinkle with breadcrumbs and drizzle with the remaining oil.
Step 4
Bake for 15 minutes at 392°F. Serve immediately in the same dish.
