Ingredients

  • Potato - 3 pieces
  • Eggplants - 3 pieces
  • Onion - 2 pieces
  • Sweet Pepper - 2 pieces
  • Chinese green beans - 5.3 oz
  • Tomatoes - 7 pieces
  • Red Long Chili Peppers - to taste
  • Ground Black Pepper - to taste
  • Basil - to taste
  • Parsley - to taste
  • Cilantro - to taste
  • Salt - to taste

Step by Step guide

Step 1

Wash the eggplants, slice them into rounds about 0.5–1 cm thick, and sprinkle with salt.

Step 2

Pour in water and let it sit for 10 minutes. Then drain the water and squeeze out any excess liquid. Pour a little vegetable oil into the bottom of the pot and arrange the eggplants in it.

Step 3

Peel the potatoes and cut them into cubes, then place them on top of the eggplants.

Step 4

Remove the seeds from the bell pepper, slice it into half-rings, and add it to the pot.

Step 5

Then add the diced onion.

Step 6

Green beans (I have frozen ones).

Step 7

Slice the tomatoes into thick rounds.

Step 8

Parsley, basil, and cilantro.

Step 9

Slightly salt and pepper each layer of vegetables. Add half a cup of water. Cover the vegetables with an inverted plate, place a lid on the pot, and simmer on low heat for 1 hour.
