Ingredients
- Chopped almonds - 2.1 oz
- Celery stalk - 2.1 oz
- Chinese green beans - 7.1 oz
- Carrot - 3.5 oz
- Shallot - 1.8 oz
- Garlic - 2 cloves
- Cilantro - 0.4 oz
- Cream - 1 fl oz
- Chicken Broth - 0 fl oz
Step by Step guide
Step 1
Peel and finely chop the onion, carrot, and garlic; dice the celery into small cubes, separate the cilantro leaves from the stems, and finely chop the stems.
Step 2
Heat olive oil in a skillet, add the celery, onion, garlic, and carrot, and sauté over medium heat for 3 minutes.
Step 3
Add the green beans, season with salt and pepper, and continue to simmer over medium heat for 2 minutes.
Step 4
Bring the broth to a boil, transfer the skillet contents into the broth, cover, and cook on low heat for 10 minutes.
Step 5
Toast the almonds over medium heat for 1.5 minutes; chop them together with the cilantro stems and add to the finished soup, stirring well.
Step 6
Blend the soup until there are small chunks remaining, season with salt and pepper, add the cream, stir, and heat over medium heat for 1 minute.
Step 7
Ladle the soup into bowls and garnish with cilantro leaves.
