Almond Paste with Herbs and 'Feta' Style Oil
Ingredients
- Roasted Almonds - 4.6 oz
- Lemon Juice - ¼ cup
- Olive Oil - 2 fl oz
- Salt - 1¼ teaspoons
- Garlic - 1 clove
- Thyme - 1 tablespoon
- Rosemary - 1 teaspoon
Step by Step guide
Step 1
Place the almonds in a medium-sized bowl and cover with water by 10 cm. Leave for 24 hours. Drain the water and rinse. Blend the almonds, adding lemon juice, 3 tablespoons of olive oil, garlic, salt, and ½ cup of water for 6 minutes or until the mixture becomes creamy.
Step 2
Place a thin layer of cloth over a strainer, and pour the blended mixture on top. Gather all the corners together to form a ball the size of an orange. Place it in the refrigerator for 12 hours.
Step 3
Line a baking sheet with parchment paper. Place the almond cheese ball, removed from the cloth, on top. Shape it into a brie cheese form.
Step 4
Bake for 40 minutes or until the top of the cheese is golden brown. Cool down.
Step 5
Mix ¼ cup of olive oil with the herbs and heat over medium heat until the mixture warms up and begins to simmer slightly. Cool to room temperature and drizzle this mixture over the almond paste just before serving.
